Kale salad with root vegetables.


2 bunches kale, stems and leaves cut into thin strips
2 tablespoons. olive oil
1 tablespoon. Apple cider vinegar
1 ½ tsp. sea ​​salt, divided
1 cup whole nuts
¼ tsp. Cayenne pepper
1 medium turnip, peeled and grated (1 cup)
1 medium carrot, grated (½ cup)
2 green onions, sliced ​​thin diagonal


2 tablespoons lemon juice
1 tablespoon grated lemon zest
1 tablespoon olive oil
1 tablespoon low-sodium soy sauce
2 tsp. honey

1. To make the salad: Place kale in a large bowl and poured olive oil, vinegar and 1 teaspoon salt above. Gently mix all about 2 to 3 minutes until kale begins to wither. Let stand 30 minutes.

2. To make the dressing: Mix lemon juice, lemon zest, olive oil, soy sauce and honey in a bowl. Season with salt and pepper, if desired.

3. Stir turnips, carrots and green onion mixture kale. Toss with dressing. Garnish with walnuts.
